Bacon Guacamole

Hi friends! I hope everyone had a fabulous start to the week.  I’m feeling much better since snapping out of a little funk I was in last week.photo 2 (1)

Maybe I should add this recipe to one of the ways to instantly boost your mood!  This guacamole was delicious and we may or may not have scoffed the entire bowl down in one short sitting.

This was somehow the first time I’ve ever made guacamole!  My best friend and roommate of seven years makes the best guacamole in the world so I pretty much always left it to her.  Andy and I thought it would be a great little date night appetizer though so I decided to give it a whirl.

This recipe is super simple. One because Mr. Picky doesn’t like tomatoes or onions and two because if I can make a dish without chopping anything I’m sold. Continue reading

Grilled Blueberry Pork Chops

Happy Friday!  I hope everyone had a fabulous week.  The peak of my week was probably this gorgeous pork chop that we made on the grill.  Our meals can get very repetitive sometimes, especially in the summer when all we want to do is grill!

So I set out on the world wide web in a quest for some grilling inspiration.  Not surprising that I landed on PaleOMG.  I stumbled upon one of her older recipes for Blackberry Glazed Grilled Pork Chops.  These babies looked so delicious I had to try!

I had a ton of blueberries in my fridge so decided to change it up a bit.  I also cut her recipe in half because I would only top one of the chops with the blueberry glaze since  someone else is a little picky. Continue reading

What I Ate Wednesday #1

Hi Friends!  Happy hump day!  Since joining the blog-o-sphere back in August of 2013, I’ve always enjoyed reading Jenn’s WIAW link up posts.  Jenn is the awesome blogger behind Peas and Crayons and brings tons of food bloggers together every Wednesday to share what they have been putting in their mouths. I’m not sure why it’s taken me so long to join, but here is my first What I Ate Wednesday! photo 1 (27)

For breakfast I grabbed a grande iced coffee from Starbucks.  I’ve been drinking it black lately, but today I added some Almond Milk that my work so kindly has in the fridge.  I brought in fresh blueberries that I got over the weekend and drizzled them with some of my homemade maple almond butter.  I threw it in the microwave for about 15 seconds…more like dessert if you ask me! photo 3 (27) Continue reading
