Grilled Apple and Bacon Pork Chops

Happy Sunday!  I hope everyone’s weekends were great.  Mine was pretty mellow and relaxing, which is always nice!  We had our first legitimate snow storm come through Saturday so it was the perfect excuse to get snowed in!  Before re-capping though, I wanted to share a recipe I made last week.

I was really missing the grill so decided to fire it up!  Even though it was about 25 degrees out it was definitely worth it (or maybe I should ask Andy that since he was the one who ended up doing the dirty work).  I wanted to grill some pork chops but didn’t want to make my barbecue and rosemary chops.

I came up with Grilled Apple and Bacon Pork chops. The apple and bacon is really just a saute that I topped the pork chops with once they were off the grill.

Grilled Apple and Bacon Pork Chops

  • 3 Bone-in Pork Chops
  • 1 Gala Apple, diced
  • 1/2 Small Red Onion, chopped
  • 2 Slices of Thick Bacon, cut into small pieces
  • Coconut Oil
  • Salt, Pepper, Sage

Melt about 2 tablespoons of coconut oil in the microwave and pour over your pork chops.  Try to have them in a warm place so the oil doesn’t harden right away.  Sprinkle each side with salt, pepper, and sage.  Place the pork chops on grill over medium high heat.  Grill one side for about 8-10 minutes.  Flip, and cook the other side for 8 – 10 minutes or until cooked through.

While the chops are grilling you can prepare the Apple and Bacon saute.  Take a teaspoon of coconut oil and place in a hot pan over medium heat.  Put your bacon in the pan first and cook for about a minute so that your pan is nice and greased.  Add the apple and onions.  Sprinkle with salt, pepper, and sage.  Continue cooking and mixing around for 8 – 10 minutes.  Leave on low until pork chops are done.

Top your pork chops with the apple and bacon saute!  I loved this dish.  I hope you do too!

A Super Simple Recipe – Oatless Oatmeal!

Alright maybe it’s the cold weather settling in or the fact that my schedule has me getting home much later on Mondays…but I’ve been craving something warm, comforting, and easy for dinner.  Before going primal I literally used to eat oatmeal with peanut butter every day for breakfast.  So for some reason, the past few weeks I’ve really been craving my old go-to.

This was my first attempt at making Oatless Oatmeal.  It is a super simple recipe that’s perfect for nights you get home late or mornings when you want something other than eggs!

By the way, I didn’t measure much for this recipe. It’s approximate, so add a little here and there to your liking.

Oatless Oatmeal

  • 1 very ripe banana
  • 1 tsp of coconut oil
  • Justin’s Almond Butter (I used Maple but any flavor would be great I’m sure)
  • Some milk (I used skim milk this time around)
  • Sea Salt
  • Cinnamon

Place a small sauce pan on the stove over medium heat.  Add the coconut oil so that it melts.  Break your banana into small pieces and add them to the pan.  Start to mash them, it will become easier as they get warmer.  Add in almond butter (i used about 2 scoops) and milk.  Start mixing and keep mashing to get out most of the clumps.  Add a dash of salt and some cinnamon.  Stir for another 5 minutes or until it has the consistency you like.  Pour in a bowl, cozy up on the couch, and enjoy!

Does anyone else have a good recipe or different version of “oatless” oatmeal?

Simple Caprese Burgers

I think I’m getting this burger thing down!  I had a bunch of basil left over from my Lemon Basil Chicken & Artichoke “Pasta”  meal last week.

I figured why not throw the basil in some burgers?  And if I’m going to have basil burgers well why not just plop them on some juicy tomatoes and top them with some fresh mozzarella?  And so were born these Simple Caprese Burgers.

These burgers came out great, they were some of my favorite ones yet.  I paired it with some parmesan quinoa and have lunch ready for the rest of the week!

Simple Caprese Burgers

  • 1.25 lbs Grass-Fed Ground Beef
  • 1 Cage Free Egg
  • Sea Salt
  • Cracked Pepper
  • Garlic Powder
  • Fresh Basil (chopped)
  • 1 Big Juicy Tomato
  • 2 Large Fresh Mozzarella Balls
  • Extra Virgin Olive Oil

Add your egg, salt, pepper, garlic, and fresh basil to your beef.  Mix together and form 4 patties.  Throw on the grill over medium high heat for 5-7 minutes.  Flip the burgers and cook for another 5-7 minutes.

Place burger on one or two slices of your tomato.  Top with a few slices of fresh mozzarella.  Sprinkle with salt, pepper, and extra virgin olive oil.
