Happy Hump Day people! I thought I’d pop in to the What I Ate Wednesday link up this week by sharing my weekend eats. My weekend eats are much more exciting than my week day eats. It’s all about balance…and well usually that means I am a little bit more lenient with myself on Fridays – Sundays.
This past weekend we stayed in town, went to some of our favorite places, tried some new spots, and also whipped up some things for a little family get together we had at our house.
Friday night began with this absolutely delicious cocktail. It was a fresh Blueberry Mojito from one of our favorite barbecue restaurants, Joey C’s!
We started with a bit of an over the top but oh so good appetizer. It’s guacamole with bacon AND shrimp! I think we were the first people to add two items in to the guac because the waitress was a bit surprised.
I ordered “Just the pork” pulled pork with one of their famous Carolina Style sauces. This sauce is the least spicy and has a vinegar base so I figured it probably had the least sugar.
I paired my pulled pork with sweet potato fries obviously. I ended up taking these home which made for a fantastic mid-night snack on Saturday.
On Saturday morning, after I taught my 7th yoga class ever (yes I’m still counting) I went to the cutest little breakfast place with my best friend to catch up over omelets and coffee. This place is the definition of a Mom and Pop breakfast joint with all locals. I got a broccoli, spinach, and bacon omelet. It was scrumptious! I had a couple of bites of the toast and a few of the home fries. They were both amazing but I stopped myself!
On Sunday we had some family over our casa so we made a couple of appetizers. I made my Bacon Guacamole again (and also regular for the vegetarians). We bought the most tasty plantain chips and also put some carrots on the side as an alternative.
We also put out cheese and crackers and fig spread because you just can’t go wrong with that. The crackers are nut thins which are one of our favorite gluten free alternatives!

Nut Thins are definitely a staple at our house and I’m totally addicted to the Cheddar ones! I would’ve never thought to add bacon to guacamole but it sounds amazing! I’m seriously going to have to make that!
Oh yes we always have a box of nut thins in the cabinet! Hope you enjoy the bacon guac it’s addicting!
