Pesto Stuffed Beef and Bacon Burgers

Happy Sunday people!  Hope your weekends were fabulous.  Mine was pretty fabulous.  I saw family and friends, ate good food, drank great drinks, and oh I nailed a handstand!!

When I say I “nailed” a handstand I mean I held my handstand for about three seconds, away from the wall, for the very first time.  Bid deal. Huge deal.

On to the good stuff though…food!  Andy and I wanted to take advantage of our new food processor for dinner tonight.  I haven’t had pesto in a while so looked around the good ol’ blogsphere for some pesto recipes.

We found these Bacon Pesto Stuffed Burgers from Amazing Paleo that looked delicious!!  We made a few changes to the recipe so I figured I’d write down our twist.  They definitely did not come out as pretty…how the heck do you actually stuff a burger?  But looks aside, they were pretty freaking amazing!

Pesto Stuffed Beef & Bacon Burgers

Ingredients – Makes 4 Burgers

Burgers

  • 2 lbs Grass Fed Beef
  • 4 Pieces of Bacon
  • Bacon Fat (from 4 pieces of bacon)
  • 1/2 tsp of Spice Rub of Choice
  • Fresh Mozzarella

Pesto

  • 2 oz Fresh Basil
  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup of Walnuts
  • 2 cloves of Garlic

Throw all pesto ingredients in a food processor (I’ve also used a blender before) for about a minute.  That was easy!

Cook your bacon, save the fat, and cut into small pieces.  Add bacon pieces, bacon fat, and spice rub to your beef and mix together in a bowl.  Form 8 patties of the same size (this is where we went wrong).  Top 4 of the patties with a tablespoon of pesto.  Place another patty on top of each and press edges together (also where we went wrong).    Place burgers under broiler for 12-15 minutes.  Flip half way through if you can.  Once burgers are done, top with a fresh piece of mozzarella.

So delicious of a burger you don’t need any condiments.  That’s my test for how good a burger is I just decided. Enjoy!
