A Girl’s Night with a Chicken Sweet Potato and Apple Bake

Last night I had a “Girls Night.”  I love a girl’s night and hope I have them through my twenties, thirties, forties, until forever!  Three of my best friends came over to celebrate Christina’s birthday.  We completely vegged out.  Which means, comfy clothes, wine, dinner, dessert, and even some silly yoga.

I wanted to make a nice fall dish for everyone.  I thought about it all day trying to think up a dish.  I knew I wanted sweet potatoes, maybe some fall vegetables, and chicken.  Then I remembered the sweet potato and apple hash I made recently and got inspired by that.  I decided it would be easier to make a one dish meal – ya know take a bunch of ingredients, throw them in a pan, put it in the oven, and done – that’s my kind of meal!  And so was born the Chicken Sweet Potato and Apple Bake.

Chicken Sweet Potato and Apple Bake

  • 4 Organic Chicken Breasts
  • 1 Macintosh Apple (cut into small cubes)
  • 2 Sweet Potatoes / Yams (cut into cubes)
  • 1 Red Onion (cut into cubes)
  • 3-4 Tbsp Coconut Oil
  • Salt
  • Pepper
  • Cinnamon
  • Fresh Rosemary

Pre-heat oven to 350 degrees.  Put the coconut oil in a casserole dish and put it in the oven for a couple of minutes for it to melt.  Place the 4 chicken breasts in the dish and salt and pepper each side.  Add in the sweet potatoes, apples, and onions on top of and around the chicken.  Sprinkle a little more salt and pepper and a dash of cinnamon over the dish.  Top with some fresh rosemary.  Cover with tin foil or lid and place in the oven for 40-45 minutes.  Enjoy with a grilled vegetable – I did asparagus last night.

After dinner and a few glasses of wine we had plenty of girl talk, life in your 20s talk, more wine, pumpkin spice hershey kisses (so good), selfies, and down dog practice!  All in all it was a pretty fabulous night.  Girls nights are always good for the soul.

What To Do With All of Those Instagram Pictures?!

I have a love affair with this little app called Instagram…ever heard of it? Since the day I downloaded Instagram about two years ago now, I’ve been pretty hooked. Which means I have A LOT of photos. So I often find myself thinking ‘What to do with all of those Instagram pictures?!’

printstagram

Then I stumbled upon this awesome site called Printstagram. Printstagram takes your instagram photos right from your account and puts them into a framed collage for you.

They have a bunch of different options for sizes, how many pictures, etc. Besides their frame products they also do posters, photo books, calendars, and even greeting cards. Awesome holiday gift ideas!

I decided to get a 4 x 4 collage for Andy for our anniversary. I swear I didn’t get him that because I secretly wanted it :). The company was fantastic. I ordered it on a Tuesday and they got it to me by Friday for no extra charge. I had sent them a message on their Facebook page and Catherine responded right away. Great customer service and the collage frame came out great! I think Andy liked it too!

Take Me Back Tuesday – Chicago!

Happy Take Me Back Tuesday!  I’ve had Chicago on my mind this week.  After those crazy storms ripped through the area I made sure to check in with some friends who live there.  I have visited Chicago three times over the past few years in both summer and in winter!

It’s an awesome city; tons of sights, fun things to do, friendly people, and great little neighborhoods that all have their own little feel.

Looking back at my pictures and remembering my different trips there I realize that I should clarify these Chicago trips were all taken in my early 20’s.  This means while yes we saw some of the main sites, the trips mainly consisted of a bunch of girls in their early 20s reuniting and having a lot of fun!

Here is my list of my favorite things to do in Chicago.

Cubs Game at Wrigley Field – Wrigleyville

Wrigley Field is one of the oldest baseball stadiums in the country.  It’s a great thing to do on a summer day.  The Chicago Cubs aren’t the best team in the league so you don’t have super competitive fans (like you might find at a Yankee / Red Sox game).  It’s really just a bunch of baseball fans having a good time!  Wrigleyville is an entire neighborhood around the stadium that has some awesome bars.  Be prepared for drinking marathon if it’s a game day!

The Bean!

By far one of the coolest monuments I’ve seen.  I always have to make a stop here every time I visit Chicago.

The L

I love that their trains are raised above the streets.  And I thought Boston was unique!

Crown Fountain

This exhibit is right near The Bean.  It has a rolling display of random people’s faces.  It’s a big fountain and a great place for kids to play around in the summer.

Navy Pier

The Navy Pier is a must tourist attraction.  There are a ton of food vendors, souvenir stands, and a giant ferris wheel.

Lake Michigan

Lake Michigan definitely doesn’t look anything like a lake.  It’s huge! I’ve gone to the beach on the Chicago side, which is cool being right next to the city.  We’ve also driven over to Michigan to my friends lake house.  The sunsets here were amazing!
